<p>Iata reteta pentru 4 cani de vin fiert:</p>
<p>- o lingura de cuisoare</p>
<p>- o lingurita de scortisoara macinata</p>
<p>- 4 cani de vin, preferabil rosu</p>
<p>- coaja rasa de la o lamaie + o jumatate de lamaie stoarsa</p>
<p>- un mar taiat bucatele</p>
<p>- 4 linguri de afinata sau brandy/coniac</p>
<p>- 2 linguri de miere</p>
<p>- o strecuratoare, o cratita cu fund inalt, 4 cani groase.</p>
<p>&nbsp;</p>
<p>Se pun pe foc: afinata, zeama de lamaie, merele si cuisoarele. Se lasa putin pana se amesteca aromele dupa care se pun deoparte. (Nu se &#8220;prajesc&#8221; merele, atentie!)</p>
<p>Intr-o cratita cu fund gros se toarna vinul, se incalzeste si cand este aproape de fierbere se pune amestecul cu mere. Se amesteca 5-10 minute pana incep sa iasa aburi dupa care se adauga scortisoara macinata, mierea si coaja rasa de lamaie.</p>
<p>Se da cratita de pe foc si se acopera cu un capac pentru a nu se evapora alcoolul. Se serveste cald, cu sau fara mere, dupa ce s-a trecut printr-o strecuratoare.</p>
<p>Se pot inlocui merele cu mandarine, dupa gust. Puteti adauga si coaja uscata de mandarine/portocale pentru un plus de aroma.</p>

<pre>Pâte à Choux - Aluatul
- 4 oua mari
- 1 albus de ou
- putina sare
- 1 lingura de zahar
- 85 g unt
- 165 g faina patiserie

Crème Pâtissière
- 28 g unt la temperatura camerei
- putina sare
- 55 g faina patiserie
- esenta de vanilie
- 2 cani lapte integral
- 2 oua mari
- 1 galbenus de la un ou mare
- 114 g zahar

Ganache - Glazura
- 1 ceasca smantana foarte grasa / Hula pentru frisca ?
- ciocolata de casa
- 1 lingura de sirop de porumb (pentru stralucire, optional)</pre>
<p><strong><span style="text-decoration:underline;">1. Aluatul</span></strong></p>
<p>- Masuram faina.</p>
<p>- Intr-o cratita se amesteca sarea si zaharul, se adauga untul, se amesteca pe foc pana da in fiert.</p>
<p>- Se adauga in cratita faina. Se amesteca la foc mic pana se incheaga asemeni unui aluat.</p>
<p>- Se transfera intr-un vas de plastic si se bate cu mixerul pana nu mai iese abur din aluat. Trebuie sa semene cu niste firimituri.</p>
<p>- Se adauga usor ouale si albusul de ou. Dupa ce s-au incorporat in intregime, se mai bate doua minute.</p>
<p>- Se asterne o foaie de copt pe o tava si pe ea ca niste jumatati de degete, aluatul. Din acestea vor creste mini-eclerele noastre. Aveti grija sa lasati spatiu intre ele ca sa creasca si un trick: cu degetul ud neteziti fiecare mini ecler pe deasupra inainte sa bagati la cuptor.</p>
<p>- Bagati tava pe lacasul din mijloc al cuptorului. 15 minute la pozitia 7 a cuptorului (fierbinte – 220* C), apoi 10-15 minute la pozitia 4 a cuptorului (moderat – 180* C). Trebuie sa arate putin maronii acum.</p>
<p>- Se scot pe un gratar ca sa se usuce/raceasca fara sa se lipeasca. Se taie cat sunt calde pe lungime, ca sa putem introduce ulterior cu usurinta crema.</p>
<p><strong><span style="text-decoration:underline;">2. Crema</span></strong></p>
<p>- Se cantaresc 57 de grame de zahar.</p>
<p>- Intr-o cratita la foc mediu se amesteca zaharul acesta cu laptele si se aduce aproape de fierbere (pana la acest punct se fac si pasii de mai jos).</p>
<p>- Se amesteca faina cu restul de zahar si putina sare intr-un bol de plastic.</p>
<p>- Se bat ouale si galbenusul intr-un vas de plastic, se adauga mixtura de faina si zahar si se bat bine.</p>
<p><strong>PAS IMPORTANT:</strong> Cand laptele e fierbinte, se ia de pe foc si se toarna DOAR 1/4 din cratita peste amestecul din oua, AMESTECAND VIGUROS cu telul. Atentie, acest pas se face pentru a tempera ouale (adica a le aduce la temperatura prielnica fara a le face zdrente). Apoi se infasoara bolul cu un prosop ca sa nu se verse la pasul urmator, dupa care se adauga putin cate putin compozitia cu oua in cratita, amestecand VIGUROS cu telul.</p>
<p>- Se pune toata compozitia la loc pe foc mediu si se amesteca viguros inca 5-6 minute. Va avea consistenta unei budinci. Se scoate pe un suport, nu se lasa sa se raceasca. Se trece printr-o sita pentru a elimina eventualele cocoloase. Se adauga untul si esenta de vanilie, se amesteca bine. Se acopera suprafata intreaga, eliminand orice contact cu aerul, cu o punga si se lasa la racit, dupa care la frigider. Cand este rece, se umplu eclerele cu ea, ori cu punga de patiserie ori cu lingura.</p>
<p><strong><span style="text-decoration:underline;">3. Glazura</span></strong></p>
<p>Se topeste ciocolata de casa la bain marine, se evita pe cat se poate sa se incalzeasca mai mult decat necesar (pentru ca nu se va mai intari dupa aceea). Se baga la frigider si se scoate din 10 in 10 minute si se amesteca. Trebuie sa prinda o consistenta de budinca. Se trec eclerele cu partea de sus prin ea. Se baga la frigider sa se intareasca.</p>

<p><strong>Daca ai chef de:</strong></p>
<p><em>* ceva care sa dureze cateva zile</em></p>
<p><em>* o reteta super usoara, care necesita minimum de atentie</em></p>
<p><strong>Ingrediente (10-12 portii):</strong></p>
<p>* 4 cutii mari de mazare (doar Bonduelle!)</p>
<p>* 500 g carnati cabanos Meda</p>
<p>* 4 cartofi medii, taiati in bucati mai mari</p>
<p>* jumatate de cana de bulion</p>
<p>* 4 cepe taiate marunt</p>
<p>* sare dupa gust (eu nu prea pun multa sare, ca ador gustul dulceag al mazarei)</p>
<p>* apa cat sa acopere mazarea in oala</p>
<p><strong><br />

<p><strong>Preparare:</strong></p>
<p>1. Intr-o oala medie se toarna ulei si se caleste ceapa. Se pune bulionul si se amesteca bine la foc potrivit.</p>
<p>2. Prima oara se pun cartofii ca sa aiba timp sa fiarba, dupa cateva minute se pune mazarea si se amesteca bine. Se completeaza cu apa cat sa se acopere mazarea. Cand cartofii s-au fiert inseamna ca este gata.</p>
<p>3. Intr-o tigaie se pune ulei la incins. Se taie carnatii lungi cat degetul mic si se cresteaza in X la capete. Se pun la prajit bine in tigaie. Se scot din ulei si se pun la sfarsit, in mancarea de mazare (dar dupa ce aceasta a fiert complet).</p>
<p>*3. Se mai poate face si altfel: Se prajesc carnatii separat, fara a se pune in mancare, si se savureaza proaspeti, cu mazarea.</p>
<p>Se serveste in portii mici sau medii pentru ca este foarte consistenta.</p>
<p>Din acest motiv merge foarte bine cu apa minerala.</p>

Daca esti o persoana careia nu ii plac mancarurile picante poate nu este pentru tine aceasta reteta, dar tine cont de faptul ca tu potrivesti gustul a tot ceea ce pregatesti! Nu trebuie sa iti arzi limba ca sa savurezi un gust total deosebit. Urmatoarea reteta combina sosul de salsa piperat cu quesadilla crocante prin care se lafaie un cascaval topit delicios! Vei avea nevoie de o tigaie si de rabdare pentru ca fiecare quesadilla se pregateste individual.</p>

<p><strong>Daca ai chef de:</strong></p>
<p><em>* ceva picant si aromat</em></p>
<p><em>* o reteta usoara si sanatoasa</em></p>
<p><strong>Ingrediente (4-6 quesadilla mari):</strong></p>
<p>* lipii de tipul celor pentru shaorma</p>
<p>* 1 conserva ciuperci taiate</p>
<p>* 4 rosii mari si coapte</p>
<p>* 1 ceapa taiata marunt</p>
<p>* 3 catei de usturoi</p>
<p>* masline fara samburi, feliate</p>
<p>* cascaval ras in prealabil</p>
<p>* coriandru boabe</p>
<p>* piper si sare dupa gust</p>
<p>* sunca de pui taiata cubulete sau fasii</p>
<p>* salata verde taiata fasii</p>
<p>* o rosie taiata cubulete</p>
<p><strong>Preparare sos de salsa:</strong></p>
<p>1. Se toaca de mana sau se pun in robot urmatoarele: ceapa, rosiile, usturoiul, coriandrul, sarea si piperul dupa gust. Se obtine un amestec consistent.</p>
<p>2. Se lasa la frigider macar 2 ore (are un gust mai bun daca se asteapta ca aromele sa se &#8220;amestece&#8221; la rece).</p>
<p><strong>Preparare Quesadilla:</strong></p>
<p>1. Se iau lipiile una cate una si se aseaza direct in tigaie, pe foc mic.</p>
<p>2. Se pune o cantitate generoasa de cascaval si se asteapta sa se topeasca (inteligent ar fi sa se agite tava intre timp pentru ca lipia sa nu se arda). Cascavalul poate fi pus pe intreaga suprafata, dar la urmatorul pas umplutura trebuie pusa doar pe jumatate de lipie.</p>
<p>3. Se pun dupa gust oricare sau combinatii de: ciuperci, masline, rosiile cubulete, salata verde, sunca de pui, etc. Se pune sos de salsa dupa gust. Atentie, doar pe jumatate de lipie.</p>
<p>4. Se pliaza o data sau de doua ori, cum va convine si cum va permite cantitatea de umplutura. Se taie in 2 sau in 3, ca in poza.</p>
<p>Se serveste rece si se mananca repede, ca sigur nu va mai lasa nimeni nimic in farfurie!</p>
<p>Neaparat o bautura racoritoare la indemana, mai ales daca sosul de salsa este foarte picant!</p>

			<content:encoded><![CDATA[<p>Ne-au innebunit americanii cu cupcakes-urile lor. Una, doua, cupcakes. Briose cu ciocolata, briose curcubeu, briose in forma de animale. Am facut si eu o reteta de cupcakes, insa e bine de stiut ca e nevoie de o tava speciala pentru formele de briose. Eu am luat-o de la IKEA, are spatiu pentru 12 briose. Mai e nevoie si de un set de hartie cerata pentru briose (ori o decupati ori o cumparati de-a gata, eu am gasit in Auchan).</p>

<p><strong>Daca ai chef de:</strong></p>
<p><em>* o reteta americana traditionala</em></p>
<p><em>* un desertdulce si amuzant</em></p>
<p><strong>Ingrediente (12 briose):</strong></p>
<p>* 2 cani si jumatate de faina</p>
<p>* 1 cana si jumatate de zahar</p>
<p>* 1 plic praf de copt</p>
<p>* 1 lingurita de sare</p>
<p>* glazura (caramel, ciocolata, etc)</p>
<p>* 1 cana de lapte</p>
<p>* esenta de vanilie</p>
<p>* 2 oua mari</p>
<p>* eventual colorant alimentar, daca tineti neaparat sa colorati glazura sau compozitia, dar nu prea e sanatos</p>
<p><strong>Preparare:</strong></p>
<p>1. Se amesteca faina, zaharul, praful de copt si sarea intr-un bol mare. Se adauga lapte si vanilie. Se bate cu mixerul bine, pana se topeste zaharul. Se adauga ouale. Se bate iar cu mixerul.</p>
<p>2. In tava speciala se aranjeaza hartiile cerate si se toarna compozitia in fiecare forma. Se baga la cuptorul preincalzit si se verifica din cand in cand cu o scobitoare daca sunt gata. Daca ramane compozitie pe scobitoare se mai lasa. Daca nu, se scot pe rand pe o tava.</p>
<p>3. Se pun la racit si se pregateste glazura conform pachetului in care vine (teoretic, se amesteca bine cu cateva linguri de apa si se pune pe briosele reci). Se orneaza apoi cu bilute colorate sau alte chestii colorate pentru prajituri <img src='http://s0.wp.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>Se servesc oricand, la orice temperatura.</p>
<p>Merg foarte bine cu o bautura racoritoare.</p>

<p><strong>Daca ai chef de:</strong></p>
<p><em>* o garnitura la fripturica</em></p>
<p><em>* o portie de cartofi cu iz mediteranean</em></p>
<p><strong>Ingrediente (4 portii):</strong></p>
<p>* 10 cartofi mari, curatati si taiati in bucati mari (6-7 felii per cartof)</p>
<p>* o capatana de usturoi, curatat si pisat</p>
<p>* 150 ml ulei de masline</p>
<p>* 2 cani de apa</p>
<p>* 1 lingura de oregano</p>
<p>* sucul proaspat de la 2 lamai</p>
<p>* sare, piper, unt</p>
<p>* o rosie taiata felii subtiri</p>
<p><strong>Preparare:</strong></p>
<p>1. Se pun toate ingredientele intr-o tigaie bine unsa cu unt si se amesteca bine (de preferat sa puneti rosiile dupa aceea, la suprafata, pentru ca se vor lipi de cartofi si vor fi delicioase).</p>
<p>2. Se asezoneaza cu sare, piper, oregano din plin. Se baga la cuptorul preincalzit, timp de o 40 de minute &#8211; o ora. Daca vi se pare ca se lipesc cartofii, dar nu sunt inca gata, mai puneti un pahar de apa. Cand partea de sus s-a rumenit, intoarceti cu o paleta cartofii pentru a-i rumeni si dedesubt. Cand sunt rumeniti in intregime ii puteti scoate si servi.</p>
<p>Se servesc calzi, eventual ca garnitura la o friptura suculenta.</p>
<p>Merg foarte bine cu o bautura racoritoare.</p>

<p><strong>Daca ai chef de:</strong></p>
<p><em>* un desert usor, cu iz de cafea</em></p>
<p><em>* o reteta usor de pregatit</em></p>
<p><strong>Ingrediente (6 portii):</strong></p>
<p>* 400 g piscoturi</p>
<p>* o cutie de branza mascarpone (e important sa fie mascarpone, pentru ca nu este nici sarata, nici dulce, e ca un unt mai pufos)</p>
<p>* 4 oua</p>
<p>* 4 linguri de zahar</p>
<p>* un castronel cu cafea si whisky/rom/coniac</p>
<p>* cacao</p>
<p><strong>Preparare:</strong></p>
<p>1. Se separa albusurile de galbenusuri. Galbenusurile se amesteca cu zaharul pana ce acesta se topeste in intregime. Se adauga crema Mascarpone si se bate foarte foarte bine.</p>
<p>2. Se bat albusurile  pana se umfla (eu bat cam 15 minute cand am rabdare, sa ma asigur ca va fi pufoasa crema).</p>
<p>3. Un pas foarte important: se amesteca cele doua compozitii insa nu cu mixerul! Se amesteca usor, cu miscari lente, utilizand o lingura, ca sa nu se dezumfle.</p>
<p>4. Pe un platou se aseaza unul langa altul piscoturile inmuiate in cafea (nu inmuiati foarte mult pentru ca se vor insiropa si de la crema iar un tiramisu prea moale nu va mai fi la fel de placut). Peste primul strat de piscoturi se toarna jumatate din crema, se mai pune un strat de pisoturi si se toarna si restul cremei. Cu ajutorul unei strecuratori se presara cacao pe intreaga suprafata. Se tine la frigider minim 2 ore.</p>
<p>Se serveste rece, in maxim 3 zile.</p>
<p>Merge foarte bine cu o bautura racoritoare.</p>

Chili cu carne de vita si legume e genul de mancare pe care poti sa il faci si sa te &#8220;tina&#8221; macar cateva zile, nu trebuie sa gatesti iar maine seara. E destul de consistent, delicios, si e un amestec de .. toate. N-as sti daca sa il incadrez in categoria tocanitelor sau a ciorbelor pentru ca depinde de cat doresti sa il diluezi.. Oricum, se face repede si n-ai foarte mult de munca la pregatirea ingredientelor.</p>

<p><strong>Daca ai chef de:</strong></p>
<p><em>* o mancare consistenta si preparata rapid</em></p>
<p><em>* o combinatie de legume si bucati de carne de vitel</em></p>
<p><strong>Ingrediente (12 portii):</strong></p>
<p>* 5 rosii mari taiate cubulete sau 2 cutii de rosii cubulete</p>
<p>* 1-2 ardei rosii (sau galbeni, dar nu verzi)</p>
<p>* 1-2 ardei iuti</p>
<p>* 200 g pasta de tomate cat mai consistenta</p>
<p>* o punga de legume congelate (mazare, morcovi, ceapa, conopida, etc)</p>
<p>* un borcan de fasole mexicana (merge si fasolea normala, dar n-are acelasi impact vizual)</p>
<p>* un borcan de ciuperci</p>
<p>* 3-4 cartofi taiati ca pentru ciorba</p>
<p>* o ceapa mare, taiata cubulete</p>
<p>* 200 g bacon, taiat cubulete</p>
<p>* 500 g gulas de manzat</p>
<p>* sare(delikat), boia, piper</p>
<p><strong>Preparare:</strong></p>
<p>Atentie, se gateste in paralel. Pe un ochi al aragazului se pune o tigaie, pe alt ochi se pune o oala mare.</p>
<p>1. In oala mare se pun rosiile cubulete cu 2 pahare de apa si cu pasta de tomate consistenta. In tigaie se pune putin ulei, se prajeste bacon-ul si se scoate cu paleta direct in oala. In uleiul ramas se pune ceapa taiata si se scoate tot cu paleta, cand este maronie, direct in oala. La acest pas se adauga in oala legumele congelate, ciupercile si cartofii, ca sa aiba timp sa se faca.</p>
<p>2.  In uleiul care a ramas in tigaie, sau daca nu a ramas se mai toarna ulei, se prajeste gulasul de vita. Nu trebuie prajit excesiv, el se va mai patrunde si cand va ajunge in mancare. Cand e gata, se pune in oala (recomand sa nu rasturnati tigaia in oala deoarece carnea de vita lasa multa grasime si nu prea e placuta). Se adauga o lingura de boia si se amesteca bine.</p>
<p>3. In tigaie se adauga ardeii rosii taiati cubulete, alaturi de ardeii iuti, taiati cat mai marunt. Aveti grija sa nu inhalati vaporii de prajeala, sunt mai rai ca la ceapa! Cand s-au inchis putin la culoare se adauga si ei in mancare. Se adauga fasolea de la cutie (o punem ultima pentru ca s-ar fi distrus daca am fi adaugat-o la inceput).</p>
<p>4. Se pun cam 2 linguri de sare, dar depinde si de la gust la gust. Daca mai e nevoie se mai pune piper (desi probabil ca e totusi suficient de iute!). Se gusta cartofii daca sunt facuti si daca da, se opreste focul.</p>
<p>Se serveste cald, cu cascaval ras pe deasupra daca va place.</p>
<p>Merge foarte bine cu o lipie in loc de paine, mexicanii fac si un fel de &#8220;shaorma&#8221; din chili.</p>

<p><strong>Daca ai chef de:</strong></p>
<p><em>* un desert delicios si consistent</em></p>
<p><em>* o combinatie intre sarat si dulce</em></p>
<p><strong>Ingrediente (6-8 papanasi cu capac):</strong></p>
<p>* 500 g branza de vaca</p>
<p>* 100 g zahar</p>
<p>* 2 oua</p>
<p>* faina (se aproximeaza cantitatea de faina astfel incat aluatul obtinut sa nu fie deloc lipicios)</p>
<p>* bicarbonat de sodiu stins (otet/lamaie)</p>
<p>* sare</p>
<p>* esenta de vanilie</p>
<p>* smantana si dulceata (eu pun de coacaze, cea de la IKEA, dar puteti sa puneti orice va place)</p>
<p><strong>Preparare:</strong></p>
<p>1. Se amesteca intr-un castron toata branza, ouale, zaharul, bicarbonatul stins, esenta de vanilie (o lingurita, maxim doua), praful de sare si faina. Faina se pune atat cat sa nu mai fie deloc lipicios aluatul.</p>
<p>2.  Se fac 8 bile mari si 8 bile mici din aluat dupa care cu degetul acoperit de faina se fac gauri in bilele mari, cam de marimea celor mici, si se trec bine prin faina (puteti sa le apasati putin, ca sa fie mai plate si sa se prajeasca bine). Bilele mici le vom folosi, dupa prajire, pe post de &#8220;capac&#8221;.</p>
<p>3. Se pregateste o tigaie mai adanca, cu mult ulei (cel putin jumatate din inaltimea unei bile mari de aluat), se incinge bine si se pun pe rand, la prajit, toate bilele.</p>
<p>4. Se scot (eu le pun pe servetele ca sa am impresia ca uleiul este absorbit si nu imi bat joc de colesterolul meu, dar oricum nu stiu cat ajuta) iar pe fiecare bila mare se pune o lingura de smantana si apoi o lingura de dulceata dupa care se aseaza bila mica. Se pudreaza cu putin zahar vanilinat pentru un aspect mai frumos.</p>
<p>Se servesc calzi.</p>
<p>Merg foarte bine cu un suc natural, racoritor.</p>

<p><strong>Daca ai chef de:</strong></p>
<p><em>* ceva usor</em></p>
<p><em>* o combinatie cu tente asiatice</em></p>
<p><strong>Ingrediente (4-6 persoane):</strong></p>
<p>* o punga de vermicelli de orez (sunt niste taitei din orez, foarte subtiri si albi la culoare. nu se gasesc oriunde din pacate, eu nu am gasit decat in Auchan).</p>
<p>* 500 g carne tocata pui.</p>
<p>* un borcan de ciuperci.</p>
<p>* un borcan de porumb fiert.</p>
<p>* 5-6 catei de usturoi, zdrobiti; cantitatea se imparte in doua.</p>
<p>* 150 ml sos de soia.</p>
<p>* alte legume (in imagine sunt cateva frunze de varza chinezeasca)</p>
<p><strong>Preparare:</strong></p>
<p>1. Se ia o tigaie mare si adanca si se unge cu putin ulei. Se prajeste rapid jumatate din cantitatea de usturoi. Se pune apoi porumbul fiert si se mai prajeste cateva minute. Atentie sa nu se lipeasca de tigaie! Se scoate si se pune intr-un vas.</p>
<p>2.  Se unge aceeasi tigaie cu ulei si se pune si cealalta cantitate de usturoi. Se adauga ciupercile, se prajesc cateva minute si apoi se adauga carnea de pui. Carnea de pui trebuie gatita foarte bine. Daca se lipeste, se torna putin sos de soia pe deasupra. Carnea inglobeaza sosul de soia si gustul e divin! Atentie, nu puneti mai mult de 50 ml de sos de soia, este foarte sarat!</p>
<p>3. Intre timp, se da in clocot o oala cu apa si putina sare. Se introduc rapid vermicelli si apoi se strecoara. Nu trebuie sa stea mult in apa pentru ca orezul absoarbe foarte repede orice lichid. Se amesteca vermicelli in tigaia adanca si se adauga si porumbul prajit anterior. Se amesteca bine si se toarna 100 ml de sos de soia. De fapt, dupa gust, daca doriti mai sarat puneti mai mult sos de soia. Unii mai adauga si boia sau bucati de ardei iute. Dupa cum am zis, potriviti dupa gust!</p>
<p>Se serveste calda.</p>
<p>Merge foarte bine cu o bautura acidulata.</p>
